Anyone notice problems with insulin resistance before diagnosis?

About a year or two ago I noticed I felt like total crap if I ate something like a really sugary cake or even a bowl of white rice. Brain fog, maybe a bit of nausea, just overall blegh. I used to be able to eat this stuff way more before. I saw an endocrinologist last year and my fasting glucose was normal and I have an A1C of 5.2. Not prediabetic. I'm REALLY skinny (BMI 17.6) and I walk 20 minutes to and from work, so at least 40 min of walking a day, plus I walk to get lunch, do errands etc (I live in a walkable city and don't have a car). The only thing is, I have definitely been slacking on going to the gym to do resistance training and more intense cardio. I have felt like I "needed" it because walking doesn't really clear my brain fog like more intense exercise does. I've also started trying to eat more whole food meals since last year because of some other health scares (realize now it was related to stress and anxiety), but since they went away in November I started eating whatever I wanted again: chips, Kinder Buenos, all the fruit I want. I even bought some grocery bakery goods again like I used to. From mid 2023 to 2025 I would actually eat bakery goods (chocolate croissants, marblecakes, apple turnovers, etc.) every single morning because "I was young and healthy and don't gain weight anyway." I think I was just speedrunning insulin resistance at that point. I got my ultrasound this past Wednesday and it said mildly echogenic and coarse liver and I was so dismayed :( I don't even drink btw, only maybe like 2x a year socially. Now I know I need to go back to cutting all the shit out. But it also kind of puts my past experiences into perspective and everything makes sense. Did anyone else suspect something was up because of insulin resistance despite otherwise seeming healthy?

Edit: I also started having allergies for the first time in my life a few months after starting eating the baked goods in the mornings. Like I had been using the same shampoo for years, and suddenly it gave me eczema on my hands and I had to go fragrance free everything. I also now have a nickel allergy and if I eat certain foods like too many beans, spinach, whole wheat, etc. I get eczema on my hands and lips.
