Question related to saddles!

Hello vintage bicycle friends, I have an old miyata six ten. I recently replaced the derailleur and it has been riding great. I have one gripe. The saddle! It is the original avocet saddle that I think came on it, but it has a noticeable swoop to it. There is a dip in between the front and the back of the saddle, and I find it very uncomfortable. My mountain bike has a very flat and narrow saddle, that I like much more. Any flat vintage looking saddles you guys know of? I don't want to throw on a modern saddle that doesn't at least look old. Thanks! Not sure if you can see the dip in the picture but I provided it anyway. Also in the picture it is tilted back quite far, but I found that to be most comfortable with the current saddle.

Bought this diamond back response sport for $35.

Has new WTB velociraptor tires, Shimano center pull brakes with avid levers, that happen to be my favorite brand of levers for cable brakes. It has Araya wheels just like my old road bike, Shimano 7 speed rear cassette and shifter, sugino 3 speed chainrings and cranks with a matching Shimano shifter. Also has a rock shox fork that feels decent enough. I need to rebuild it though which equates to replacing the rubber and springs lol.

I aired up the tires that have no wear or dry rot, put on an old WTB seat, generic bars from a 2010s trek, and old odi grips. I think I'm going to throw in a shorter stem. It has a quill adapter so I can use my normal stems.

I'm not good enough at mountain biking to warrant an expensive bike. I retired my 26 year old full suspension turner that used to be my dad's that he got used in the 2010s. He has a fancy ibis 29er that's full suspension and all that, but I don't like the handling of new bikes that are so huge. I think this 26 inch will be fine for me. I don't ride through mud really so I don't need disc brakes either. I ride BMX and a road bike all the time so I'm more used to the handling of the 26 inch turner and smaller bikes.

I got this bike for free from my uncle. He got it in the 90s I believe, and it is a 1983 I think. Anyway here are the parts.

It has a suntour mountech 5x3 drivetrain, with some sugino cranks and generic toe strap bear trap pedals.

It has dia compe cantilever brakes that work quite well.

All it needed to ride was new tires and tubes, and I had to replace the derailleur. One of the springs broke after riding it for a few months.

I had a few questions. What derailleur can I replace this one with? The spring on this one is super weak and the limit screws are maxed out, and it's starting to go like the old one. I was thinking something that had the same thread would fit since it's just friction shifters.

Also, what kind of bags should I put on here? I was thinking something with bright colors to match the bar tape, something like a frame bag or seat bag. Also does anyone know where I can get a nice quality rack for the rear? It has the mounting points for front and rear racks.
