How do I stop the channeling? [profitec go + df64 gen2]

I just can’t get it right 😭 grinder is down to setting 4, 18g in, 36 out in 20 seconds, regardless of going finer and finer.
I am using a DWT, a calibrated tamper. But I’m sure the error is in the prep… Where can I be going wrong?
Ironically, even a super fast shot doesn’t taste awful when made into a flat white, but the espresso itself is incredibly sour. Is there any other info you may need to help me fix this once and for all….

Time for a slicer

Ok folks, I’d like to treat myself to a carving knife / sujihiki and I’m open to suggestions. Any handle and metal, probably 240-270mm.
Price range up to £300? Unless you can convince me it is a much better performance going up to say £500.
