How would you convert this steel bike for steep dirt roads?

I’m looking for advice, so thank you in advance if you have any thoughts.

I’d like to take my old steel Rivendell frame and fix it up for use on steep dirt roads. It’s been in storage for years, and probably needs all new components. Currently it’s set up as kind of a road cruiser, with wide tires, brooks seat and Deore XT brakes and drive.

What component set would you recommend? Is it possible to salvage the components I have, and next get a new chain? I probably need new wheels.

It’s a huge frame, I’m pretty tall, but I’d like a more comfortable riding position, and possible a mountain bike style handlebar, unless that sounds crazy.
