Warmy warm-up with clicks - does that translate to real inbox placement?

I've been thinking about the gap between warm-up activity and actual email campaigns.

Warm-up networks can generate opens, replies and clicks, but those aren't the same people who'll receive your real emails.

You might have SPF, DKIM and DMARC set up correctly and still run into spam issues once you start sending to an actual audience.

So what would you trust before increasing volume on a new domain? Inbox placement tests, Google Postmaster, or actual replies from real recipients?

Also curious if anyone treats Gmail and Outlook differently during that transition.
