Why do some cultures emphasize the need to use formal speech, and think that equals to being respectful?

I've realized that certain cultures, for example, Korean cultures heavily emphasize the need for the younger person to speak formally to the older person, even if they are just 1 year apart. Some of them, even if they are 1 month apart in terms of age, seems to take the chance to emphasize on the need to use formal speech.

I feel that it would just be more natural for me to treat everyone with respect, even if I speak informally, as long as my tone is gentle and not too loud, there's no need to keep emphasizing on using formal speech and reminding each other of the age gap.

Is this a normal thing for you?

I like how my other Western friends are way more chill in this aspect.
