From a binder. Worth grading?

That ding on the top back is shown in the last photo. It’s really small to the eye, but looks like some paint is missing when zoomed. Could this pull an 8 or even 9? Otherwise it’s just light scratching on the back and no visible scratches on the front. From what I’ve seen, PSA has tightened up on standards so I don’t know maybe they would knock this to a 6 or something which probably isn’t worth sending. Anyone have thoughts?

Most slept on cards?

I’m sure this is asked all the time but what are the latest most slept on cards in everyone’s mind? Personally I think the Brooklet Hill card from hidden fates is way underrated. It’s essentially a magikarp card with an awesome artwork. PSA 10 pop is high but not insane, around 1300, which is somewhat low for modern. Anyone else agree?

Made some french toast on it. Managed to get it to not stick at all. Burned some oil in it, wiped it out, let it cool, heated back up on medium low and added 1 tablespoon of butter. That was enough for 4 pieces of french toast made with 4 eggs(1 each basically) to glide around the pan. Pretty cool. The space allowed for 4 pieces easily, too, which I couldn't do with my 12 inch previously.

I posted a while ago asking if anyone had experience with the Winco try ply pans. I’m not sure if anybody did, but I couldn’t really find any other 14 inch triply so I went ahead and ordered it. Just use it for the first time. It’s awesome and it’s built like an absolute tank. it makes my made in pans feel dainty by comparison, even the 12 inch.

Has anyone used these noble chef 11 ply pans? I’m thinking of getting the 10 inch skillet. I have five ply right now and it just doesn’t feel like it’s enough. This is over double the plies. It’s $600 so it would be quite an investment so I’m just wondering if anyone has used the stuff before or has any thoughts.

The tech on this thing is so cool. It’s a great product from what I can see. But it could be elevated significantly just by offering a fully flat version. I get that it would occupy more drawer space. It’s worth it. The ease of cleaning, but most importantly the ability to just put a pot anywhere and not worry about it tipping, would be way worth the tradeoff imo. It would also open the possibility of a proper bridge type of functionality which would also be a nice addon.

Lastly, since I’m throwing out suggestions it would also be great if there was one 11 inch element just for even heating of oversized cookware. 9 is good for almost everything but one oversized burner would be great.

So my wife and I switched to stainless around a year and a half ago after wanting to minimize our use of non-stick cookware. It's been great and we're still learning how to best use stainless pans. I really focused on eggs in specific lately and how to avoid them sticking. Most tutorials swear that you need to heat the pan until water beads before adding oil and potentially some butter to avoid sticking. But what I've noticed recently is it seems to be more about just using some butter than getting water to bead. As long as I add a decent amount of butter, even at quite low temps where water will not come close to beading, eggs basically don't stick at all. I believe it's the lecithin in the butter from what I've read. Conversely, if I do go to leidenfrost temps, but just use avocado oil, my eggs stick a bit. Not a lot, but they don't glide like they do with pure butter.

So my observations are that basically the temp doesn't matter as much as just using butter or something with lecithin in it. Anyone else have any input? Is leidenfrost kinda made up?
