linking 50 door/window sensors and Shelly switches across a large area

I have a 43 room hotel and each room has an air-conditioner/heater and a window.  I would like to put a door & window sensor on each window and link it to a Shelly 1PM relay to disable the heat/AC when the window has been left open for (let’s say) more than 10 minutes, and then re-enable it when the window is closed again. Most rooms have 1 window but a handful have two so let’s say we need to monitor 50 pairs/trios of windows sensors and Shelly units.

I bought a Shelly 2PM Gen4 and some Aqara Door/Window Sensors (MCCGQ11LM), and an M200 hub to test with.  To be clear, I have almost no understanding of how zigbee works but my idea was that the window sensors would connect to the shelly units via zigbee, the shelly units would connect together in a mesh and connect all the rooms together, and the hub would be there somewhere in range of one of the Shelly units to link it all into HA so that I could monitor and create automations, etc.  But it seems the Aqara units use a proprietary version of zigbee so that may not work.  Should I go with matter/thread instead (not particularly familiar with that either)?

My tests with one room are working.  However, I don’t know how this will scale.

What I’d like to be able to ensure is that:

-          I don’t create a huge amount of wifi/radio interference (2.4gh or otherwise)

-          the total number of sensors and relays can all be integrated into the one system

-          they will all pair up discretely and not interfere with each other

-          batteries will last a reasonable time

-          they fall back/recover in the case of power outages gracefully

-          they are reliable and they work as expected by guests and hotel staff

-          I was hoping to avoid having to buy more hubs/dongles/proxies (and have the Shelly’s do that part)

Is what I’m trying to do a workable plan?
