I just moved to a new store as assistant deli manager and I was opening one day when I saw some mold around a temp gauge, and when I opened up the cooling elements (fan and filter and refrigeration unit area) I found mountains of mold. Probably been growing for years. I took it to my manager and was told just to “clean it” and wouldn’t let me distress any of the open food that was in the case. Ended up cleaning mold for 6 hours straight. Anybody have any experience like this? Hopefully not every deli case is like this..
