I always saw Superman dodging the truck as him being aware that he can't stop large vehicles that are thrown at him with so much strength.

I get it. Other times in every other media, Superman has caught and heavy objects in motion; but the filmmakers at the time were aiming at a more realistic approach when it came to the physics of Superman's powers.

If real physics were still applied here, the truck would've likely blown up even if Superman caught it, due to sudden momentum. Even if your truck has baffles, the liquid can still penetrate the tank due to strong sloshing. This is why tanker-truck driving is a very, very delicate task.
