ET-8500 Broken out the box?

My wife bought this printer for her business and all was smoothe sailing up until it came time to actually print. We set it up following the app instructions and steps on the device; after connecting it to wi-fi it wants to setup the paper size and run a nozzle test. I put paper in and selected the size, hit run nozzle test and it immediately shoots two pieces of paper out and says "Out of paper in casette 2". After about 2 hours and countless "phantom" paper jams I think I might cite this printer as a reason for our divorce. Out of paper in casette 2 might just be what's written on my tombstone. We just keep getting error after error and I've practically taken the thing apart. We've tried the epson customer support which is an oxoron btw and nothing will help. I really just need some guidance before I rip out all of my hair.

TLDR: Paper in tray, says no paper, won't print even the first nozzle test
