Pancake recipe without eggs from Appalachia?

My great grandmother was from WV and apparently had the best pancake recipe ever. She didn’t write it down. But it had no eggs and a few simple ingredients. Does anyone know of a recipe that might be similar to what she made?

Recommendations for a book about Appalachia life

Specifically from the old days. I’d like not so much history (like this happened on this date type stuff) but accounts from actual people (like he/she lived in a one room cabin on a mountain and here is how they got food to eat, etc). It could be anywhere in Appalachia but I’d prefer somewhere around The Smokies or Shenandoah or Kentucky or West Virginia.

Southern Appalachians: tell me about your culture!

So there is obviously a divide between those who welcome states like PA and farther north into the “true” Appalachian culture and those who do not. As a PA native I’d like to better understand the reasoning. So if you are from the southern portion of Appalachia please give us some details about your culture. How did you grow up? What about generations before you? What is your current life like? Describe your home area/town. Anything else?

(Please no comments about whether or not you believe north Appalachia really is Appalachian at this time. This post is simply for us northerners to understand the Southern portion better.)

So I currently live in Appalachia, but I’m living a more typical lifestyle compared to what my grandfathers and parents, who were 100% true backwoods hillbillies, would have. My dad didn’t live the hillbilly way, except there were influences and a few ways. I didn’t get to meet many from this part of my family. Now that I’m grown and married, I realized I’m an old soul who is most happy out in nature, fishing, gardening, simple living, the farther removed from typical society the better. I didn’t grow up this way but I feel like it’s in my blood and I yearn to be closer to it. Do you agree? Do you think that Appalachia runs in you, maybe skipping a generation but never completely disappearing?

I love that this site is anonymous but I can only assume that people have come in contact with someone they know by accident. If so, what was the scenario? Did you both realize, one of you ask, or did you get out of that situation as fast as possible?

My hair was straight as a kid, got a curly phase in high school, went more straight again in my mid to late 20’s. It also goes through light and dark variation, though I think amount of time in the sun is the biggest factor. My himair is thicker and I’m white. Does this happen to anyone else ? How can I encourage curliness to come back?
