Sainsbury Rolled Brisket

Cooked this yesterday on a 10+year old kettle BBQ that had been put out for scrap man. Im a long way from a expert but we where very happy with this. UKFood sub had lots of hate for this saying it was dry, overcooked and needed gravy. So please be gentle. :)

  • 08:00 Brisket on kettle BBQ, using a charcoal snake and Bluetooth probes.
  • 09:00 Meat around 31-35C, discovered BBQ temperature was lower than expected.
  • Morning issue: Charcoal snake failed to continue burning properly. Plenty of fuel remained but the burn chain broke.
  • 11:30 Lit fresh charcoal and added it to the fire. BBQ recovered quickly.
  • 13:00 (5 hours in) Meat reached 73-75C, BBQ running around 138C.
  • 13:30 Reached 77C, bark was dark with a reddish tinge. Wrapped in greaseproof paper and foil with a drizzle of Jack Daniel's.
  • 14:30 Meat reached 84-86C, cooking steadily.
  • 15:00 Meat reached 92C on both probes and felt soft. Removed from BBQ.
  • 15:00-18:00 Rested wrapped in towels inside a cold oven.
