Advice needed on repointing bricks with chipped edges

This seems like a very basic question to me but i am struggling to find an answer.

When repointing a wall and the bricks have chipped edges, the mortar naturally gets squeezed into the chipped edges (when i follow all the videos online anyway). This result in it looking like this (ignore everything but the mortar in the edge chips, this was my very rushed first ever attempt):

When i repointed another bit of wall, the mortar was too dry so it did not end up getting squished into the chips, like this:

So, ignoring everything but the mortar in the chips at the edge vs not in the chips at the edge, which is the correct way it should be done?
