I have all this plaid fabric and can't decide what to do with it

I got a bunch of old plaid fabric from a quilters group I was in, and really want to do something with it, but there's two things stopping me from leaping in.

First, the fabric has a faint smell of old lady home. Which isnt to say terrible (or moldy), but it's very distinct, and I'm not sure if I should pre wash. I kinda like the smell, it makes me think of my grandma's home, but I'm finding mixed results online on what it means for the health of the fabric.

Second? There's too many options for patterns! How do I pick which pattern to do?

I want to make a quilt for my bed (queen sized), and I know there's enough here. I've even got a bunch of plaid binding. How does anyone decide what to do? How do I pick?

Advice on how to finish this piece

I just finished the lettering (yes, I know the letters are a little wonky, but I was going for a hand written effect) and I feel like still it needs.... Something.

Do I outline the letters in white? Thinking of adding a star or flowers on either side of the "But," but I'm indecisive. There's also room for a border, if that would look decent with this frame.

I just loosely placed it in the frame to see how it would look, it's very much not finished yet. Any suggestions welcome.

The words on this were harder than expected. Not because of technique (the big letters were reverse chain stitch, which was pretty easy, and the smaller words are backstitched) but because looking at the same letter for too long had me forgetting what the letter was supposed to look like. I could only do two letters at a time before needing to walk away for a bit, lol

I feel like it's not as great as it could be, like it could use... Something. But maybe a real frame will fix that. Otherwise, I'm calling done good enough.

Also, using black quilting fabric might have been a mistake. Sure it looks striking, but all the dog hair in a 2 mile radius flocks to it.
