How far can I go with 500 euros in Vietnam?

I'll be staying with my aunt in HCMC for a month without needing to pay for accommodations there but I'll need to pay for food and travel by myself. I want to visit around the Mekong Delta for maybe a week so would 500 euros be possible for a trip like that? I'm ok with staying in cheap hotels and I speak Vietnamese at a decent level (I left VN at 14 but haven't been back in 8 years). I could spend up to 700 euros but it'd be tough.

Constipation despite high fiber and water intake

I track my diet very closely to the gram so I know that I eat about 35-45g of fiber a day (usually 20g through lentils/legumes, 5-10 through vegetables and fruits, and 8-13 through cereals) and drink plenty of water. I'm 24, very active, and am not on any medication or supplements. Everything has been going well until recently (May 15) when I got a pretty severe bout of food poisoning/gut infection due to some restaurant food. I didn't get any diarrhea at the time but developed secondary lactose intolerance and couldn't tolerate high fiber/bulk or any large meals for about 3 days afterwards but it's mostly back to normal now. However, after a week now back to normal food intake, I haven't been able to move my bowels almost at all. A few pebbles a day at most. Any ideas?
