Individual knife magnets

I’ve always liked the idea of individual knife magnets for my place because my old magnetic knife block took up a bunch work space in my small European kitchen. I saw some fancy ones from Piotr the Bear and while they are seemingly top quality they are also quite expensive for an individual knife holder, at least in my opinion. Saw some way cheaper ones but unfortunately they were missing some kind of leather protection the fancy Piotr ones had. I had some leftover pleather around and figured I make my own poor man version again.

Obviously goes without saying they are not even close quality wise compared to the Piotr ones but I think it worked out alright. Good enough for me at least.

Both the double sided tape and the magnets are strong enough that I don’t worry about anything falling down.

Figured I’d share because I think it’s neat.

Also: still looking for a takamura sg2 petty 🥲

Poor mans magnetic knife holder with leather

Bought this wooden magnetic knife holder from Amazon a few months ago and even though I was somewhat carefully taking them off and putting them back on, I noticed small scratches appearing on my knives and the wood getting scratched up. Don’t get me wrong, knives are tools and will scratch up slightly eventually anyway but it bugged me. Bought some cheap leather online and cut it to the right size and glued it on.

Not a as fancy as some of the (quite expensive) ones I saw online but good enough for me.

Also got some individual magnetic knife holders coming that I’ll do the same with. If I like how they turn out I’ll post them too.

Knives from left to right are:

AliExpress Ginsan silver 3 210mm Gyuto (project knife)
Takamura VG10 180mm Gyuto
Hatsukokoro Ryuhyo Kurozome SG2 175mm Bunka

Mavuika combo and citlali cryo application rng

Hey im running into the issue that sometimes even though im pretty sure i have the correct inputs and timings, the cryo application of citlali isnt working out and messes up my melts.

I use the C Q cF dcF dcF dcF --dcF rotation and i'd say on average it works for me 70-80% of the time but every now and then Citlali's cryo application doesnt line up and it messes up the melt timings by sometimes milliseconds.

Rotation 1 log

Rotation 2 Log

Rotation 3 Log with messed up melts

I've attached a dps dummy log with 3 rotations, all 3 rotations have same timings but the last rotation i didnt have cryo application from Citlali between Mavuika's Burst and the Charge after it which messes up the melts.

Is this normal and just rng that i have to accept or are there ways to be more consistent? Im not doing a N1 with Citlali before i switch to Mavuika because when i do the combo never works while skipping the N1 works for me 70-80% of the time.

Appreciate if someone knowledgeable would look over the logs and maybe give me a hint why its sometimes being inconsistent.

Edge refinement: should i immediately move to a higher grit stone after apexing/deburring?

Grit progression will be 400 grit atoma -> 1000 shapton > 3000 naniwa chocera

I'll be reprofiling on the 400 then after making sure i apexed and deburred i move to the 1000. How long should i stay on the 1000? Do i immediately move on to the 3000 after forming and removing the burr on the 1000 or should i keep refining the scratches from the 400 diamond stone for a while?

I get my knives pretty sharp, easily shave armhair and can cut kitchen paper towels but i've been moving on from the 1000 grit to the 3000 grit stone as soon as i can feel and have removed the burr from the 1000. Would i get better results if i keep refining the edge on the 1000 for a bit before moving on?

NSD shapton1000 & chocera pro 3000 new stones for my sharp sticks

Been getting into sharpening myself a few months ago and bought a 1000/4000 combo stone from a Japanese knife shop here locally. They are decent as far as I can judge as a beginner and definitely not one of those $20 combo stones off amazon but i saw a good deal on knivesandtools and could get both the shapton 1000 and the naniwa 3000 for ~$100. Which seemed like a good deal to me. Will prob get an atoma400 soon and slap a replacement 140 grit sheet on its back which should sort me out for flattening and fixing chips in case that ever happens.

Looking forward to try them.

Sharpening over black composite sink

Has anyone an idea if sharpening over a black composite sink can damage the sink in any meaningful way? Especially while cleaning the stones and having slurry drip down into the sink? Its texture is a lot more coarse than a porcelain/ceramic sink so it got me wondering.

I just got a new black composite kitchen sink recently and would hate to fuck it up arleady.
