These western chefs knives are both wearing Honduran Rosewood Burl with G10 liners and copper pins. Cores are 1084 & 15N20, cladded with 1084. Enjoy.

Multi bar of 1095 and 15n20. Handle is Desert Itonwood and Sycamore. Blade has full distal taper. Was a fun build.

Canister Steak Knives

This was a fun build for a long time customer. They wanted large steak knives with walnut handles that matched a previous kitchen cutlery set I had built them. However they wanted them to be delivered in a way that stood out from the previous work while not being flashy. The difference being that the bolster is carbon fiber instead of black paper micarta and the steel is 52100 ball bearings and 1095 powder instead of w2. Otherwise the walnut is the same as well as the liners. I’ve shared some of the steps in the process. Enjoy and hope you all have had a good weekend.

Western chefy from several years ago

This 10 inch western chefs knife in Go Mai Construction. The core is 1084 and cladded with 15n20 and 75 layers of 1084/15n20. The handle is desert ironwood burl, ruby red g-10 and copper pins.

Update on 5 in 1

This prototype was a fun build and will probably make more in the future. I didn’t go crazy on finishing because it’s a prototype/test that I want to see what can be done better or differently.

Steels are 26c3 and ProCut with suretouch handle, red g10 and black canvas liners. The pins are copper.

No bars hold! I want your opinions and criticisms, the good, the bad, and the ugly. When I started knife making I wanted and still want to make a good fighter that fits the classic K-Bar MK series or Cattaraugus knives of ww2 and the likes. Years later I’m still mulling over ideas. I’ve named these “Clipper”and not hell bent on keeping that name. I’m more interested in your thoughts on design as a whole. Let me have it!

This Persian Hunter was a custom order from several years ago. It was a joy build and I can still remember the look on his face upon receiving it. There is nothing more satisfying than a customers delight.

The blade is Go Mai construction. Core is low layer pattern weld with 1084 & 15N20 cladded with 1084 and 15n20 with unknown mild steel from the old Esco Foundry in Oregon. The handle is koa and black and white g10 liners with black g10 pins.

Recent EDC with 52100 core and cladded with 1084/15n20. The handle is Desert ironwood natural canvas Micartas and copper pins. Tang is tapered.

This laser is 10” of 1084 with an auto hamon. The handle is yellow cedar burl and Blackwood with red g10 and a copper pin. I decided to keep this one for myself, and glad I did it’s a joy to use. Cuts fresh carrots like butter.
