First pizza on the Joe

Did my first pizza on the Joe. It is a lot of fun. The hardest part was getting the coals up to temp but once it got blazing it was all systems go! The taste was incredible.

Coal recommendations

Just got my first job and I’ve never cooked with lump cold before. I am told I should not use briquettes on the Joe and should switch to lump coal. Do you guys have any recommendations on good lump coal? I’ve always cooked with Kingsford briquettes but this is new.

Oxtails on the Weber.

Oxtails on the Weber.

3 hours indirect heat. Mixture of Kingsford coal & 24hr soaked hickory wood @ 275-300 degrees.
3hours braised in beef broth w/ jalapeño, onion, and every spice in the cabinet @ 350 degrees
1/2 bottle of Blantons
1 Plasencia Cigar
1 Angry Dog
