Afraid to keep disputing.. should I sue in small claims court?

A gym I am no longer a member with continues to charge me for their personal training service. I had signed up for it at the start of my time with them. I canceled my gym membership months ago, but they continue to charge me despite getting help with Chase where 2 consecutive disputes were approved, one for $180 and the next for $540. Basically, every chargeback I win with Chase comes back as a charge from the gym again. Chase also put a 'stop payment' but still. And yes, it is my understanding per the personal training 'agreement' that once I cancel my gym membership, I should not be charged anymore (which is why I want to sue). Looking back into my statements, they pulled a new trick and charged me 2 days in a row (March 30 and March 31), $360 each which was the monthly charge for the personal training.

I'm afraid that if I keep disputing (even though they can clearly see it's the same gym charging me again) Chase will flag or even close my account. I am in good standing and pay my credit card off in full every month, and I've maintained that for about 4 years now. I otherwise don't really encounter any issues.

What would you do? I only have til the end of May to dispute as per the 60 day FCBA. Would you submit a formal dispute in writing asap, or sue, or eat the cost? I've never sued before, but I feel like it'd be the right step because clearly they don't care about overstepping my credit.
