Advice for First PC: Coming from an Entombed Laptop

Hi all, I was hoping to get some advice/opinions on the potential pc that I have listed above.

For context, I have a 2022 MSI Delta 15 laptop (ryzen 7 5800H, RX6700M, 16gb of ram). Its hinges are broken, causing the screen to come apart at the base if I apply pressure. It's practically held together by tape, and as such is permanently on my desk connected to a 1080p, 60Hz monitor.

Naturally, whilst it still works and handles games with varying success, I'm considering something that can replace it.

I'm aware that a 1x16gb ram setup is unideal for DDR5, especially when using an AMD CPU. When (if) prices come down I'd definitely get another to bring it up to 32gb.

Given the monitor that I use, and the proposed pc, would the single channel be fine presuming I'm playing games like Vintage Story, X4: Foundations, Warframe, No Man's Sky, Elden Ring, amongst others?

I'm also not concerned about the 500gb of storage, as I mostly play one game at a time and redownload them as needed.
