240mm gyuto/ kiritsuke suggestions

Looking for a 240mm gyuto or kiritsuke budget is $500. i work in a 2 michelin star kitchen in the us so performance is much more important to me than looks, but of course i still want a sick ass knife. i’m not really particular on steel i just need something stainless steel as i feel it takes too much time to care for my other steel types. thank you!

yu kurosaki

Looking at a 240mm gyuto from yu kurosaki. mt chef has a custom 165mm bunka and i really enjoy using it, but i also am more comfortable with a larger knife. does anyone know if yu kurosaki retail knives are high quality, i don’t want a knife that is being sold just to sell. i work in a 2 michelin star restaurant so i really put my knives to work.

let me preface this by saying i live close to nyc so everything is pretty expensive! i’m looking at a studio apartment for 1500 a month and i currently make ~$60,000 gross. i work in fine dining so my income is based heavily on overtime, but its very consistent hours. would 1500 hundred work for me? i don’t have any other expenses as im on my parents plans. My car is also paid off!
