Had a bit of an oversight did not allow enough headspace and they didn't seal. That's my fault I wanted to use all the goods. these bad boys had to be reprocessed and recanned within the 24 hour time frame. 40-45 mins in water bath

pickled these jalapenos onions and carrots tonight before racking out. did 20 minutes in the water and have an extra container of brine left over that I'm going to marinate some steak in for the win.

Canning salsa /chile, spaghetti sauce, and pickled jalapenos onions and carrots. Also a leftover jar of brine from that to make some marinaded steaks! fist time and they all sealed so happy!!!

After this week everything has to be preserved shelf-stable I have no room for my regular inventory. I know this is manute to most of your inventory, but this is a lot for my toddler and I.

Dipped my foot and making some okra for the first time. This is a tester batch made it super hot with red pepper flakes, garlic, Dill, Bay leave and peppercorns. also couldn't help myself made another batch of pickles. 😋
