Plush Doll with Changeable Hair

I found this pattern of a life size plush, and I plan to use it as a base for a doll of a character my brother likes as a Christmas gift. In researching the character's official design, I discovered that there is a winter-themed version of the character, which would be perfect for a Christmas gift, though I'd like for the plush to also be able to swap out for the original version for the rest of the year.

The outfits are easy enough to swap out, and I already have a pattern for them. My current sticking point is, the winter version of the character has a different hair color. From all the tutorials I've seen online, the back of the head is usually sewn in the color of the hair. The character also has long pony-tails (almost floor length), which would make the hair relatively heavy.

My current solution is to install an invisible separating zipper in the head to attach the hair. This also has the added benefit that the doll can be unstuffed to be washed.

Is this a reasonable solution, and how much more difficult do you think this would make the pattern? Is there better solutions?

I've seen some tutorials on sewing doll hair patterns, but any tips on drafting the pattern would be much appreciated as well!

Applique fabric recommendations for plushies?

Hello! I am new to plushie making, but would like to make plushies of my OCs. I found a pattern that I like, and plan to get some of Hopen's mochi minky for the body and hair, and probably find some patterned fabrics on Spoonflower for clothes etc.

From what I've read online, it seems like the two main options for designing faces are embroidery and applique. Given that I don't have an embroidery machine nor the funds to acquire one, my sewing experience up to this point is somewhat limited, I feel like attempting to learn to hand embroider on top of the plushie making process will likely lead to me quitting in frustration, and I've found some nice doll face applique patterns that I like, I am going with applique.

I really like Hopen's mochi minky because it comes in so many colors, but it is also expensive. Ideally, I would like to find another fabric with a decent range of colors that won't break the bank for the applique since I'll likely be purchasing several different colors, and likely either half yards or full yards since that is mostly what is available online. What fabric do you use for applique or would recommend? It does not have to be minky, but ideally would have a decent texture that would go well with the fabric I am using for the body.
