Timing advice for topping indeterminate tomatoes at the end of this summer/season

First year growing indeterminate tomatoes, as well as first year growing tomatoes in a raised garden bed. Both big successes! I'm wondering, though, if there are some rough guidelines people use here, in Minneapolis specifically, but Minnesota more broadly, and determining when it's time to top off their indeterminate tomatoes to stop more height, and to focus the plants energies on producing what fruits they still have left. I know it's a crapshoot when the first frost will happen, and it seems like we are skewing a little bit later every year maybe? But I didn't know if some people had a specific date that they always use, like the middle of August or the end of August, etc.

Shallot advice/Minnesota Zone 5a

First time growing Shallots and looking for advice on when to stop watering, or how often to keep watering. Some of the shallot tops are still green but floppy, while some are ram-rod straight! As it's mid-August, should I stop watering now so I can harvest in September? And if not, how often and how deeply I should I still keep watering?
