I once had goat chops in an Indo Pak restaurant called Aga in Houston. It was the most amazing thing ever. Is there any equivalent in Dallas?

I had a niche tech blog domain for ~10 years and missed the renewal. It went to auction and sold for about $2k on GoDaddy. The current owner has just put random unrelated content on it, so it doesn’t seem like they’re actively using it or building anything meaningful.
It’s been almost a year, and I’m hoping they might eventually let it expire. I’d love to get it back, but I’m not willing to overpay again.
What’s the best way to monitor a domain for expiration or availability without signaling interest (like triggering alerts to the owner or increasing perceived demand)?
Are backorders safe to use for this, or do they increase the chance of another bidding war?
Any stealth strategies people here have used successfully?
