Use only one Pokemon while travelling from Gym to Gym (Mini-Region). After earning new badge select new Pokemon from previous Mini-Region. After completing Gym-challenge, build your team from 8 pokemon you conquered Gyms with. Use this team to travel to and complete Pokemon League!
When I play older gens, I have a hard time training my whole team and completing Pokedex.
Switching pokemon each time enemy pokemon faints, switch-training just because your teammate is weaker than others takes long time and can get quite repetitive.
Completing Pokedex is also difficult for me, because I cannot see solid reason to catch every Pokemon in the area. And running across all region after defeating Elite Four is not so fun too.
But with this challenge (and its rules) both problems disappear! You train one pokemon at a time (almost always) and you must catch as many pokemon on each route as you can!
Pokemon FireRed/LeafGreen will be used as an example, because I've created this challenge when these games were re-released on Nintendo Switch 😺
Your game region is divided into 8 Mini-Regions. Each one starts and finishes on important game point (game start, Gyms, post-game):
Each region contains routes/caves/cities that become available between two consecutive Gyms. At the end of each region lies it's biggest challenge - the Gym! Defeating this Gym grants you and your Pokemon "Mini-Champion" title.
For Kanto-like regions, (where most of the map is accesible after Gym 2) you can use walkthrough to determine which routes belong to which mini-region. Or choose how you like!
I've come up with whis mini-regions layout:
At the start of your journey, you travel with your starter until you get your first badge.
After defeating every Gym, your partner Pokemon becomes "Mini-Champion" and "retires" until you complete the Gym challenge.
After each Gym, you must choose your next partner from the Mini-Region you've just COMPLETED. So for the 2-nd Gym you must use Pokemon that you caught while travelling to the 1-st Gym! You can see on the example map earlier what routes/cities correspond to which Gym
Think carefully! Consider not only next Gym typing, but also Pokemon and trainers you'll face on your journey! For example, picking a Pikachu to defeat Cerulean Water Gym seems good, but you also must traverse mt. Moon with ground Pokemon!
If you need HM's to travel, then having HM slave is totally allowed. Just use it for HM moves only!
This approach takes away tedious grinding of your whole team by training only one Pokemon!

While you travel you must catch as many different Pokemon in your current Mini-Region as you can, because after becoming Mini-Region Champion you MUST NOT catch any more pokemon from this region and move on!
This encourages you to search for all interesting pokemon before you select your next partner and also helps fill the Pokedex.
For cities that have Gyms there is another rule: Pokemon caught in this City belong to the NEXT Mini-Region. For example, Eevee from Celadon City can be used to defeat Saffron City Gym.
When you get all 8 badges, you will have 8 Mini-Region Champions! After defeating 8-th Gym, select which of these Chamopions you want to defeat Elite Four and Rgion Champion with and DO NOT switch until you become a Region Champion yourself!

You can decide if you want to use legendary caught in each Mini-Region. For my run all legendaries were prohibited, it would have become too easy otherwise.
At the end I had my 8 Mini-Region Champions:
As I said, I took my HM slave with me to the League, because she have been with me almost all the adventure. I even gave her a proper nickname after that!
Only 2-nd Gym with Mankey was hard for me, others were easy/fun!
My favourite Gym was Fuchsia, because I used Will-o-Whisp+Confuse Ray strategy with Ninetales
After this run I grew fond of Dodrio, so you can call it a success 😸
Also, I've trained my previous partners when the current one was overleveling, so before Pokemon League all of them were 40-48 level! With VS seeker I quickly leveled all them up to 50-th, which was enough for the final challenge.
After becoming Pokemon Champion I've had 93 regstered Pokemon! Not gonna lie, I evolved some of them along the way 😺
