I need some help as a new bunny owner. i’m very concerned

I went on a trip back home and on the way back to where I currently live me and my boyfriend adopted a bunny from somebody that had him for I think about a year. Ever since we got him, he has not wanted to eat any veggies no matter what kind I give them or what time of day I give it to him, but he is consistent in eating treats, chew toys, hay, and pellets. I’m not sure why he doesn’t eat the veggies and if anybody has any answers on that, if you can, please let me know. He also is a free room and I have him in a c&c grid cage that I leave open 24/7 and the first few days I kind of just let him settle in and I didn’t really do much touching or petting or anything just so he can get adjusted to the new environment because the previous owner did say that he was very shy and likes to keep to himself but now I’ve had him for almost a month and he still does not really like to be pet and he runs away very quickly, even if I’m being slow, in his line of sight or if I’m doing hand feeding he still likes to try and take the food away and go eat in the corner and I’m not sure why he does it. He is a solo male and that’s how we got him, but I’m not sure if he also needs a friend or anything because we do have other animals like guinea pigs and cats that I thought maybe he could try and bond with a little bit, but he doesn’t even like to leave his cage and wander around our bedroom. He’ll just sit in his cage all day, but he will dig at the floor and not even sleep on his bedding, but sleep directly on the floor that I have in there for him. I’m not sure what’s wrong with him and if this is just his personality or if I’m doing something wrong, but I’m worried about him and I’m not sure if he needs a friend or if I’m doing something wrong and I need to make some changes if anybody could please let me know. also a couple sidenote is the girl that we did get him from. He was severely matted so I had to try and de-matt him the best that I could, which meant that I did have to cut off a lot of hair, he wasn’t able to see anything at all, and I had to cut all the hair around his face, and his nails were overgrown. He has a bunch of pee and poop around his bottom that I had to clean off (including staining), so I’m not sure if he just has trauma from his previous household also but I have been trying to slowly do a lot of maintenance on him because he isn’t fully comfortable with me yet so I’ve been trying to take it slow
