How do you handle potable and waste water?

Just wondering if you all have any advice in dealing with restocking potable water and emptying waste water. I am planning to park my trailer in a spot that doesn’t currently have an on-site hookup to dispose of waste water. It has a sewer line and I have permission to make improvements, but I don’t own the property so am hesitant about that. I have a cargo van that I could maybe install some tanks with pumps for both waste and potable water. However the form for county health only has options for “on-site disposal”, “certified waste management service”, or “self carry (22 gallons at a time max)”. Not sure if I would even be allowed to use my own van with storage tanks. Have any of you all created a set-up like that where you restock and empty your own trailer from a second vehicle? I could bring the trailer to the RV dump station, but it’d be a little annoying having to move it just for that. Should I just reach out to a tank cleaning company instead? Thanks for any advice.

Builder recommendation in OR?

Not sure if this is an acceptable place to ask this- does anyone have recommendations for trailer builders in Oregon? I’ve asked around with carts around town and searched online. Got a few estimates so far, but wondering if any of you all have experience working with any builders that you would recommend?

Truck vs Trailer

Should I go with a truck or trailer? I guess I’m just looking for any insight from any of you all with experience. I know it really depends on my business goals and how we will operate. Im looking to build out a mobile pizza business and my options right now are between a new 16’ trailer or a 16’ used workhorse truck with 100k-150k miles. They are pretty similar in price, but that doesn’t really matter. We just want to start off with whatever will be best. I’ve diagramed out the floor plans for both with accurate equipment dimensions. The truck has less a bit less working space and I would have to compromise a tiny bit to make the layout work. It’s probably easier to move locations with a truck, but I do have concerns about reliability considering how many miles it has. The trailer would be brand new, so I have less concerns about maintenance issues popping up. It would be a little more comfortable to work in because of the roomier working area, but maybe a bit more difficult to move locations. I have a Chevy express 2500 that I would be towing with. It has standard towing 6500lbs and max tow 10,000lbs. I think that would be enough? I know it’s up to me what I want for my business, but I wanted to see if any of you all have opinions from your experiences running trucks or trailers.

We have been selling pizza at farmer’s market using a booth and feel confident with the concept. Frequently have requests to work catering and events. I live in a popular tourist area and have some places lined up park, but there are plenty of other opportunities for locations. Our goal is to set up the truck/trailer in town to sling pizza a couple days a week, but long term the goal is to move towards catering/events. There are a few other tourist towns 20ish miles away I could rotate to when I know there are events happening.

Let me know if I should provide any more info. Appreciate any insight you all might be able to share.
