We are having a party this evening. The theme is Mexican food. So last night I smoked some beef chuck. And added to the home made barria sauce. Until I moved to the Southwest I had no idea about this. I mean a small Midwest town in the 80s? Birria sauce is dried peppers, roma tomatoes, onion, garlic, a ton of spices blended then strained. I spiced the beef with ancho pepper, salt, cumin and smoked with a blend of fruit wood for three hours at 250°. Every hour I basted with beef broth. After three hours I slow cooked in the barria sauce.
