Dumb Phone Question

Hi, I have looked everywhere on Reddit and found some *similar* threads but not exactly what I have been looking for.

What I want to do is simple.

A button on my iPhone where if pressed, it does the following:
-Turns on grayscale
-Makes apps I choose disappear (this would be the instagrams of the world)
-Only allows apps I choose (for example, maps)
-Have a preset timer where this feature will be turn on (no way of turning off) until X time or date.

Is this something I can set on my phone? I have been playing around with settings for about an hour now and haven't come to something like I am describing.

What should I modify to get more defined?

I (31M) have been lifting for over two years now and have been consistently following the below workout for exactly 6 months now.
I weighed myself this morning at 242lbs and I am 6'5"...I was around 215/220lbs before.
I also listed my average daily diet that helps me get to the 200g (or more) of protein per day.

Note: I get to near failure every time for these exercises and then have increased the weight the next week (if I get to the max reps for that particular exercise) to start at the lower part of the reps window.

Mondays (Chest and Triceps):
-4 sets of bench press (8-10 reps)
-4 sets of dips (Max reps)
-3 sets of incline dumbbell chest press (8-12 reps)
-3 sets of single arm triceps extensions (10-12 reps)
-3 sets of pec fly machine (10-15 reps)
-3 sets of rope triceps pushdowns (12-15 reps)

Tuesdays (Back, Biceps, and Abs):
-3 sets of wide pull ups (Max reps)
-3 sets of regular pull ups (Max reps)
-3 sets of chin-ups (Max reps)
-3 sets of Lat Pull Down (8-10 reps)
-3 sets of EZ bar curls (8-12 reps)
-3 sets of wide grip EZ bar curls (8-12 reps)
-4 sets of barbell row (10-12 reps)
-4 sets of in and out dumbbell curls (10-12 reps)
-3 sets of rear deltoid machine (12-15 reps)
(Abs: 4 sets of incline sit ups (30 reps) + 4 sets of leg raises (15/20 reps)

Wednesday (Legs and Shoulders):
-4 sets of barbell squats (6-10 reps)
-3 sets of barbell shoulder press (6-10 reps)
-3 sets of leg press (8-12 reps)
-3 sets of lateral raises (10-15 reps)
-3 sets of leg extensions (8-12 reps)
-3 sets of Arnold press (8-12 reps)

Thursday (Chest, Triceps, and Abs):
-4 sets of incline barbell press (6-10 reps)
-3 sets of dips (Max reps)
-3 sets of close grip dumbbell press (10-15 reps)
-3 sets of cable single arm pushdown (12-15 reps)
-4 sets of pushups (Max reps)
-3 sets of rope overhead triceps extensions (10-15 reps)
(Abs: 4 sets of incline sit ups (30 reps) + 4 sets of leg raises (15/20 reps)

Friday (Back and Biceps):
-3 sets of wide pull ups (Max reps)

-Swim 40 laps (1k) (or) bike around 14K

Average Diet:
Morning:
-Protein shake with milk (33g of protein, 240 calories)
-3 eggs (18g of protein, 234 calories)
-Yogurt (20g of protein, 140 calories)
-Green apple (0g of protein, 80 calories)
Lunch:
-Half chicken with rice and beans (86g of protein, 1,030 calories)
Snack:
-Banana (0g of protein, 105 calories)
-Protein bar (21g of protein, 180 calories)
Dinner:
-Grilled chicken + side (35g of protein, 850 calories)
-Protein shake (25g, 140 calories)

Roughly 200-235grams of protein, 3,000 calories a day.

I wonder if I am doing too much and should just lift Monday, Wednesday, Friday and do cardio Tuesday, Thursday, Saturday.

I play tennis once a week, I swim 40 laps (1k) once a week and I bike to the beach on Sundays. Maybe I can jog and swim on non lift days? I want to be more defined, I know the muscle is there but I can't see the difference. I still see the same body as before I started lifting years ago even though friends comment how big I've gotten.

Main question: Should I replace some lift days with cardio days?
