I always see people comment on posts saying “this is the worst thing I’ve ever read”, this is the case I always think about.

They’re basically 1lb each and an inch thick. I was planning to sous vide for about an hour a forty-five minutes, followed by a sear in a ripping hot skillet with clarified butter. I read somewhere that I should throw it in the fridge or freezer prior to searing, but that seems odd. Does anyone here do that? Just generally looking for advice on how to make the best steaks.
