Back packing soon and one of my destinations will be Nice, I really want to try some local French cuisine and would love some recs for places to eat ( some cool bistros would be “nice”)

I’ve recently graduated cybersecurity and now looking for a grad job
Problem is ( even after looking at jobs) I have no idea how much money I should be looking at for my first grad job.
If they ask how much I expect what do I say before half the jobs just say “paid” which is quite ridiculous
