
Decarboxilating without losing citric acid to evaporation
I want to share a little trick I found. I usually decarboxilate in pure lemon juice and don't use a PH meter (afaik too low PH will not harm the decarboxilation process and pure lemon juice has a PH between 2-3), but due to evaporation it requires a lot of lemon juice to top op. Now I found that by replacing the lid of my pot with a slightly larger bowl filled with water, the steam inside the pot will condense back into the pot rather than leave it and as a result I don't need to top up any lemon juice during the 3h boil. The water on top still evaporates so depending on the size of bowl you might need to top up that after a while, but you don't need to worry about changing PH or topping up citric acid.
