Help finding birth or death certificate (or any helpful info)

Hi all! A couple months ago, I found out I had access to ancestry premium through my universities library, so naturally I have fallen down a genealogy rabbit hole. However, this rabbit hole has mostly been focused on trying to figure out what the heck happened to my 3x great grandfather. If possible, I want to try and learn who his parents were. I'm pretty new to this, so any tips or ideas or help would be greatly appreciated! I don't want to provide too much info as I don't want to make this post too long, but I can provide more information if need be.

The problem is his name changes over time. Sometimes he goes by his initials, sometimes he goes by his full name. He first appears on the 1875 Kansas Census as living with another family as a farmer. He lists his place of birth as Ohio in 1853, but I cannot find any birth certificate and I'm struggling to find record of families with the last name Rose in Ohio at that time who might have had a baby boy. While his place of birth stays the same, where his parents, particularly his father were born change. It's usually New York, but sometimes it's New Jersey and once it's Ohio. I have both his marriage certificates, and I also have the record from when he purchased 160 acres of land in 1889, but after the 1930 census I cannot find any record of him. I'm worried maybe I should just give up on trying to find this guy and that he will forever be an enigma, but I really want to try and find him and any help would be greatly appreciated! Edit in case anyone is willing to help: his name was Sanjuan Rose, sometimes referred to as SS Rose, he was born in 1853 in Ohio. He spent most of his life moving around Kansas. If you want to help or have any questions please reach out!
