Daisy centers as a sub for craspedia?

What do you think? I always get so many shasta daisies in my garden every summer and just seeing how I can use them. Also common onion flowers are amazingly sturdy and long lasting. These ones are over a week old.

Tips for Teaching Floral Arranging Class?

I’ll be doing my first class, for up to 25 people, for 1 hour. I realize that may be a lot in a short amount of time but it is what it is. This very basic, no mechanics. What can I do to make it faster & more efficient?
- should I let people pick out their own flowers or pre-sort bouquets? I have stem counts and will tell them how many stems of each they can take, and will have extras.
- should I pre-strip all the stems or let them do some of that?
- which technique have you found easiest for people who’ve never arranged flowers?
