What do you bring for a big breakfast?

For years I’ve always ate a big healthy breakfast and now that I’m doing a longer National Park trip without a cooler (8 days), I’m not sure what to do. What non-perishable food do you bring for a healthy and filling breakfast? Originally, I was thinking of getting some Oats Over Night packets and doing those with water, but I’m seeing lots about how they aren’t good with water and should be done with milk. What would you do?

Dispersed camping picks

As I’ve seen on here dispersed camping is best on pullout spots off of Highway 120 and Highway 140. Is there one over the other that you would recommend trying to snag first? Are there other spots you’d recommend?

My husband and I are planning a camping trip this summer and would love recommendations for our California trailheads/campsites at each of the spots I have in my itinerary above! We’re not very familiar with this state and this part of our trip. We won’t have more than two full days at any given spot, so we’re trying to see the best of each spot. I put what we need recs for in blue. Some notes:
- We are intermediate hikers and we’re willing to do more difficult hikes for better views, but nothing crazy
- As much as I would love to add more days/stops, time constraints won’t allow us and these are the parks we have decided we would like to see
- We will be visiting a friend in Monterey and have that stop figured out, so no need for recs there
- Unlikely but ideally, I’d love for an experienced California hiker to just fill out this part of my itinerary bc I’m sick of planning🫠
Tia!:)

EDIT: I am not looking for advice on whether or not I should make my trip longer. Rather asking, if you had one day at these places, what is the one thing you would see. We are aware that each stop is short. We are aware that we won’t be able to see much at each stop, but we have picked each stop for a reason. We would like to come back to California soon but for now this is our itinerary. Thanks:)
