My Favorite Tradition since Starting the Mediterranean Diet: Vegetable Leftover Frittata
Don’t judge my house I’m moving.
Every week I take my leftover veggies, heat them up in a pan, throwing some feta or mozzarella, whisk together some eggs, spices, Greek yogurt, and a little milk. Bake in the oven or steam on stove. Great way to use up the rest of your veggies.
This one is broccoli, green onion, garlic, and spinach with feta.
