Dining for vegans at PSU

Hello, I'm starting at PSU as a post-bacc this fall and will be living in Stephen Epler. I've been looking through current and past Victor's menus, and the vegan options that I can see don't look very substantial. However, I realize that this might not give me the full picture. What have your experiences been with vegan options in Portland States dining facilities? Any hidden gems? Would a meal plan even be worth it for me?

GE gas stove knob stem broke. Do I need to replace the entire gas valve?

The knob for the back left burner on my GE CGS985SETASS gas range fell off because the stem behind it was broken (see attached photo). Based on the attached parts diagram for this model, it looks like that stem is integral to the valve (59 on the diagram, GE part WB21K10119). Is this an accurate reading? If so, where can I find documentation on how to do this?

Grandma's dishwasher has its own trap. Is this bad?

Stayed at my grandma's place in New York state for a few days and smelled sewer gas at the kitchen sink twice. On both occasions, running the sink for a few minutes made the smell go away, so I think that this is the result of a dry trap. The dishwasher has its own p-trap teed with the kitchen sink downstream of its own trap (seen at the right of the attached photo). Could this setup be siphoning the water out of the sink's trap? Grandma says that she can't smell the gas and I worry that this a regular problem.
