Update: first hooch has hooched. Next steps: cold crash, jacking, freeze distillation - Applejack?

After my mishap on my last post, I added an additional 1L of Apple juice and whatever amount of sugar it was I added. I hope it will be a success!

first attempt at lactofetmented pickles

6 cloves of garlic, maybe 2 tbsp of freshly dried dill, 1 habanero.

I used 2 grape leaves cut to size (a little wider than the jar)

- 1 used to cap the potential floaties at the bottom (dill, garlic, pepper seeds)

- 1 as a topper

went walking around the neighbourhood trying to find an oak tree within distance to no avail. my neighbour has a grapevine. I'm also going to try to experiment a little with Indian bay leaf (3 veins in the leaves) and oak leaves once I get a chance. perhaps blackberry leaves as well. I have too many cukes!

I've started my hooch journey yesterday, here's our it's going...

So apparently, at one point last night the bottle became incredibly rotund. seriously, in awe at the size of the lad - to the point that it tipped over. someone, need I not mention, attempted corrective action which resulted in ~~blasting with piss~~ juiced rocketing out.

Last photo is the remainder of my first attempt. she's still bubblin' somethin' fierce, but, should I restart from scratch and pour the boxed juice into the container + sugar + yeast? I've read that I cannot use those containers as is.
