Is it legal for employers to hold work training compensation until AFTER 6 MONTHS PROBATION?

Franchise owner of a popular restaurant is trying to make us sign one of two contracts. The first is already sus but the second one states we will only get paid for our work during training (which I guess entails even soft opening) after 6 MONTHS probation.

Resto has not had its grand opening yet but we have soft launched for 2 weeks now ie. served to real people and functioned as a proper restaurant despite not having yet signed any employee contracts. We also did not have a clock in/out situation established so we’ve all been keeping our own hours logged.

Tried to discuss my concerns with employer before coming to work and having to sign it in person since they were only giving it out in person. Their response? Kicking me outta the work gc and haven’t heard back from bossman still.

Filed a claim w Ministry of Labour already.

What else can I do?
