Ayam Kecap (Braised Sweet Soy Sauce Chicken)

Ayam kecap tapi versiku. Makanya kuahnya becek2 aja. Manisnya lebih ke caramelized daripada manis gurih tok.

Resep standar

- bawang putih

- bawang bombay

- jahe

- daun salam, daun jeruk

- kecap manis

- gula jawa

- kecap asin

- lada, garam, air

Ayamnya di browning dulu sampe cakepppp, jadi dia bisa menyerap sausnya.

Bawang bombay iris tipis2 terus ditumis 8-10 menit sampe bener2 golden brown (bayangin kaya mau bikin caramelized onion).

Terus masukin aromatics lain. Tumis 1-2 menit. Masukin air dan saus/kecap. Ayam juga. Simmering 20 menitan. Masukin telor, simmer lagi 15 menitan sambil dibolak balik biar rata warnanya.

Abis itu reduce airnya. Terus besoknya aku angetin, baru kumakan. Hehehe. It always taste better on the next day.

Sweet Sour Fish / Ikan Asam Manis

Bosen makan dan masak fish & chips ye kan. Jadilah bikin ikan asam manis.

Ini aku pake pink ling. Dagingnya berasa firm, mild flavour.

Nah ini aku ga goreng deep fried. Pati tapioka sekitar 150-200 gram, aku campur dengan minyak, 75 gram. Intinya same jadi kaya pasta.

Terus ikannya aku coat semua lalu pan fried langsung tanpa tambahan minyak lagi.

Saus asam manis standar lah. 60 gr saos tomat, 60 gr gula (brown sugar better), 45 gr cuka, garam secubit kecil. Panasin semua, lalu aduk2 sampe melded dan mengental. Kalo terlalu kental bisa kasih air sedikit2 aja. Lalu masukkan ikan dan sayur2 yg udah di pan fried sebelumnya.

Iya ini ga pake pati untuk dikentalkan lagi krn saus udah mengental dan lgsg nempel ke daging.

Grilled Chicken Spatchcock Curry

Maap, I don't have better pictures than this.

Jadi.. ceritanya.. kami sedang usaha utk makan lebih sehat, ngurangin santan dsb. Kami sebenernya suka banget makan kari, gulai, rendang. Anything with strong spices is yum, tapi saturated fatnya juga syerem. 😂😂

Anyways, aku nemu ayam utuh yg udah di-spatchcock (teknik memasak yg motong tulang belakang supaya bisa direbahin rata) di freezer. Males banget kalo bikin yg standar2 bule, kaya garlic butter herbs dll. Akhirnya.. memutuskan coba bikin versi kari. Karinya pake bubuk kari merk Baba's (MY brand, mirip kaya Cap Burung Nuri, both taste and smells so good).

  1. Ayam 1.5 kg

  2. Bubuk kari 2 tbsp

  3. Minyak 2 tbsp

  4. Panasin minyak sebentar, stlh panas masukin bumbu kari, let it bloom for 30 seconds. Akan bubbling gitu. Baru masukin bumbu lain

  5. Garam 1% dari ayam, jadi 15 gram

  6. Lada hitam 1 tsp

  7. Bawang putih, kemarin pake bubuk 2 tsp. Mau pake mentah jg boleh

  8. Butter, 20 gr

  9. Bubuk paprika, 1 tsp (pewarna alami aja biar lebih gonjreng)

  10. Cuka 1 tbsp

  11. Campur semua stlh diangkat dr kompor. Setelah itu tunggu agak dingin, baru lumurin ke seluruh ayam. Diamkan minimal 4 jam, lebih bagus semalaman.

12 Panggang 180° selamat 40-45 menitan.

Jujur aja selama nunggu itu harap-harap cemas, takut hasilnya kurang memuaskan. Dan di tengah masak itu aku tiba-tiba kangen Kenny Rogers Roaster.. 🤤🤤 jadilah bikin nasinya buttered rice with garlic, and herbs + salt. Sayurnya standard cuma direbus aja, no salt, nothing. Ada hashbrowns dan gravy, tambahan aja buat bocil. It is all instant hehe.

Selama masak, asli harum sekali karinya. Setelah matang, rasanya enak banget. Sayang kemarin itu cuma marinate beberapa jam doang, jadi asinnya belom meresap banget. Tapi, kalo dimakan sama chicken juicesnya.. man it was the best roast chicken that I had for awhile. Hampir kaya makan gulai ayam tapi tanpa santan. Asli top banget. I will make more in the future.

Steak & Creamy Pasta

Dari dulu aku doyan.. steak. Cuma pas di indo tuh, selalu merasa kesulitan masak steak "yang enak". Setelah merantau, I realised a good quality ingredients itu penting buat masakan2 yg simpel kaya steak. Ga perlu bumbu heboh2 yg gimana kalo memang potongan tertentu yg lebih empuk. Kalo potongan yg lebih alot, bumbuin aja, dry rubs, a bit of baking soda, then all greattttt.

Creamy pasta underneath just to attract me kids. 😂😂

Sate Ayam

Setelah beberapa hari hujan terus2an, akhirnya cerah lagi dan langsung bakar2an.

Kalo ga salah inget, dagingnya murni dada ayam semua dari 4 ekor ayam. Potongnya ga terlalu tipis supaya puas makannya tapi jg ga terlalu tebel. Kuncinya kasih baking soda dikit dan tambah garam dikit aja. Let it sit overnight.. or toss it in the freezer, forget about it, then take it out 1-2 days before grilling.

Makan waktu 2.5 jam tusuk2in semuanya termasuk sate kulit ayam. Hhhhhh so good yet so bad.

Bumbu kacang sempet kurang, so pardon me di foto yg sama nasi, sebenernya ada bumbu kacangnya tapi di bawah sate dan sedikit :') mengsedih. Itu aku makan pake nasi uduk sisaan, sambal matah, sate+bumbu kacang+kecap, dan taburan lengkuas parut yg disangrai. Akhirnya, esok harinya aku bikin lagi bumbu satenya. Hence the first picture. Sebenernya karena males nyuci iring kebanyakan, makanya aku ga lumurin sate pake bumbu kacang, aku biarin aja dibawah, lumurin bumbunya sembari makan aja.

Setelah bbrp kali nyoba bikin sate ayam di perantauan, ini kali pertama yg aku merasa pas banget semuanya. Ayam empuk, juicy, mateng tapi ga kematengan. Kalo ada yg kelewat crispy alias gosong2 dikit, maklumin aja pas ngebakar sering keganggu bocil2 😂😂. Lumayan lah ngobatin kangen. Apalagi di tempatku kurang banget makanan Indo yg enak. Ada yg jualan PO, some good tapi ya kurang puas kecuali mau kanker (kantong kering 🥲). Apalagi di sini.. kalo ke resto suka ada makanan.. namanya chicken satay tapi dateng2 bentuknya.. tumisan ayam pake bumbu kacang. 😅🙃🫠
