Only partial trade I would consider would be a boning/butcher knife by a western maker to replace the sabretooth which is my fav of the 3 - selling reluctantly purely as it’s been a tough financial month and I need the cash (these were not easy to acquire). Realized despite a smattering of knife sales recently I still have 15 Japanese knives and 16 westerns… I can’t get them all off the rack and in use enough and someone will use these a lot more than me.

Yep, I purchased the sabretooth ktipped new as performance preference but full transparency it did have a minor tip incident once and became a touch shorter, too. Have used it plenty since - performer. Have cleaned and trimmed a good of prime ribs, tenderloins etc at work with this, but it’s small and nimble enough to be useful at home too which is primarily where it lived. All purchased new from either overseas knife store/direct from Shibata after 18 month wait list.

These knives are pretty iconic and don’t need much of an introduction or bio, but if you want any more info, pics, or anything at all please holler.

This has been my go-to breakfast knife for the last year - killer on everything from potato and hash ingredients like shallot/garlic, fruit, perfect avocado slices - big fan, and super cool maker history. Crazy bang for buck with this knife too.

Selling due to need to downsize - and although I prefer the extra size and height of this one, keeping the similar profiled Takeda Ko-Bocho as I’m a bit of a Takeda fanboiii/collector.

[WTS][Can/US] Enjiki Migawa Ginsan Petty

Selling:

Enjiki Ginsan petty 120mm

Bought new - used a handful of times, never sharpened. Original box. Migawa etch actually pops slightly more in person than in the photos.

Aesthetically gorgeous, well made, light, sharp. Selling as these only came in 120mm and didn’t think I would notice too much of a length preference, but now know 135mm is my minimum and 150mm is my sweet spot. Feels a lil too short to keep forever but will definitely pick up another Enjiki Migawa, possibly the b2 240 gyuto.

[WTS][Canada/US] Kisuke Blue 2 Kurouchi Tsuchime Nakiri

Kisuke Manaka blue2 nakiri 165.

Purchased new from Chefs Edge. Original box. Has been sharpened - was not sharp on arrival.

Very good specimen from this maker - classic rough tsuchime, very reactive core steel, rustic in the right ways. Feels like more knife than 165 - was worried this would be a too short for my preference but never felt that way in hand. Selling due to winning the eddworks nakiri raffle today (🤩🥹) and trying to recoup some funds for that by letting another nakiri go to make room.

When I purchased this, it was a 1 of 1 which was a huge selling factor and I’m pretty sure it’s still the only X8Ni9 clad one … never saw them restock one, anyone else post one, or any more
marketed on their socials.

The knife that unlocked western makers and Apex Ultra for me. Absolute stunner. Currently extremely sharp. Super thin. Tip is a needle. Taper makes this knife super universal in tasks it excels at.

Regrettably on the chopping block as I have a 250 spare gyuto that’s very similar in specs, and have a isasmedjan cleaver on pre-order that’s getting delivered sometime in the next month or two.

[Selling][Canada/NorthAmerica] Hado Blue 1 Damascus Bunka.

Hello.

Listing some knives tonight I really didn’t plan on selling, but had my car written off this week and have to get into a new one very soon - funding a down payment.

HADO B1D Bunka - 180mm - 51mm heel - 163g - Cherrybark handle upgrade.

Purchased new from Cooks Edge for over $700 cad.

Selling: $620 cad shipped within Canada, or $430 usd + shipping to the states if it doesn’t sell domestically by the time the weekend rolls around.

Don’t really need to upsell this knife. B1D bunkas, especially cherry bark are pretty few and far between. Sad to see it go. On the chopping block as although plain looking I just reach for my TF denka in the same length, a lil more. Natural patina from natural use - can remove.

Only 2 lil things to note are a little chip in the clear lacquer on the handle (pictured) which I was just going to reseal but as I’m selling, will leave the new owner to do what they want with it - it’s not hurting it at all, or getting bigger but worth noting. And then a little scratch also pictured from a regrettable rogue ceramic rod swipe when I still used those - both reflected In price :)

Listing a handful of knives tonight I did not want to sell, but had my vehicle written off and have an expensive new purchase on the horizon.

Prod Petty - 186mm - 41mm - 131g - 52100 core - Wrought clad.

Second owner, very lightly used. First owner listed this about two weeks after it went live on his site, so couldn’t have used it much at all. I have used 3 times. Once meat, once fruit, one shallot. Lil patina going - happy to remove.

On the chopping block as really wanted to try a Prod knife, and this was the first one I had the opportunity to buy - very high demand, but rushed into a length I’m super saturated in. Have a Raquin compact gyuto 5mm longer, long list of 185-180 bunkas, nakiris, & Santoku, and a 150mm petty. Will go back for a prod gyuto when the time is right. Preference being a little closer to the action when using a petty - this was my first long one.

Very cool combo of a little bit of heel you don’t get much in pettys, but tapers down super thin.

270mm / 55mm heel height / 260 gram / octagonal birch handle with white spacer (SO suited to this knife) / SLD core / original box / essentially like new condition.

One of the better looking knifes out there in my humble opinion that very rarely comes up for sale anymore, especially in 270mm. Got discontinued pretty abruptly after selling out instantly on every drop due to a high fail rate during forging. Always wanted one of these so bad, and when I saw one for sale on marketplace a good amount of time later, knew i HAD to have it. They started making the current darker Ku versions exclusively soon after. My wife’s fav knife to display on the rack, but as collection has gotten a lil, out of control - can’t keep x2 big 270mm gyutos, and my Bjorn Birgersson 270mm is a bit of a unicorn for me.

Purchased locally from a guy who purchased new and was first owner. Said he never used it, as it was a lil’ too much knife for him and his kitchen space was extremely compact but I can presume it was used for test cuts. I have personally used it twice.

[WTS][Canada//USA] Masashi Kaijin honesuki 150mm

Afternoon!

Selling a close to new Masashi Kaijin honesuki in very well treated vs1. 150mm // original box // used 3 times max - close to new condition. Original edge. Only blemish is a little scratch from either a honing rod, or magnetic knife rack on the kanji side shown in photo (likely the former). Edge basically knew. Im very partial to the handle of this one.

Purchased new from knifewear - original owner. Selling due to downsizing as you can see from recent sales - have 2 honesukis and decided to keep the other as I barely use either as is so no point having 2 plus I own a 240mm gyuto from the same line which is my go-to knife at work that’s never going anywhere.

Takeda Nas Mioroshi deba medium (182mm’ish)

Aogami super, stainless clad, rosewood handle by the man himself.

Comes from a decent Takeda collection (8 Nas knives) and just selling because I have loved using this knife so much, so upgraded to a Mioroshi large from today’s StaySharp drop to increase the amount of versatility of use.

Paid like $800 for the new one today, selling this one for either $475 shipped in Canada (preferred) or $350 usd + shipping (if it doesn’t sell in a couple days domestically)

Obviously not the uber-takeda thin but incredibly versatile for that - past the obvious of what a deba is intended for this knife is amazing at a compact protein slicer, and takes on all the tasks a Takeda would never such as squash, celeriac, starchy veg etc.

Just noticed a tiny crack in ferule of handle in the photo, whilst writing this so went and inspected - seems shallow and stable and does not reach the tang, nor end of ferule but worth noting - looking at my photos I took on arrival a couple weeks ago when I unboxed, as well as sale photos in the purchase thread linked above it were there when I got it but I honestly never noticed. Dropped the price by $50 usd / 65 cad from what I was going to list at, accordingly. (More photos on request)

Bit of a catch and release for me. This is my third denka (western 195mm gyuto + 180mm Santoku pictured) and comes uber-thinned by district cutlery from the previous owner.

Selling due to me actually liking the thicker, more robust stock feel of a denka - had to try it to find that out though. May replace with a new stock one somewhere down the line… but really I’m selling because I bought a super expensive gyuto this morning and something’s gotta make room for it.
