Taking my senior parents to O'ahu in June!

I live in Canada (BC) and my parents are coming one last time to visit me from France in June, as they're too old (and have health issues) to travel now. To make that last visit extra special, I decided to take them to O'ahu for one week one the second week of June. O'ahu was preferred as it's reassuring for them to know that there's a big hospital if needed.
I've been saving for three years to be able to offer them that trip, so I don't want to mess up. We'll be staying in Kahuku as it's less busy, and I'll be renting a car for their comfort. I've been to Maui with them three years ago and we had a blast, those are memories I'll never forget. It's hard to see your parents age (they're now close to 80) and being an expat it's even harder to be able to see them only twice a year (which I'm very grateful for, some people can't take the time off at work).
Anyways, as mentioned they're not super healthy but can still walk but won't be able to do crazy hikes. My dad enjoyed snorkeling a lot in Maui (especially when a turtle swam very close to him, he looked amazed and excited like a kid).
I was wondering if you would have any suggestions about visits/activities that you would recommend. I wish I could afford to take them on crazy tours but my budget is limited. My dad wants to go to Pearl Harbor, I want to take them to Hanauma Bay, and other cool spots, but don't want to stay in Honolulu for days to be honest. They're also not huge fans of big cities, so outside the city is preferred. Honolulu can be a day trip or two.
Would the hike to Diamond Head be to hard for seniors? They do walk on a daily basis at home, but mostly on flat surfaces.
Would you recommend to visit the Dole plantation?
They are lots of things to see, but also a lot of expensive touristy activities packed with people that we could probably avoid. I really want to plan around my parents being seniors, and am not sure what I should look for or avoid.
