Epic - Barcelona to Rome questions (Haven't been on a cruise in 21 years)

Sorry if I'm bustin' chops or breaking rules here, just trying to get some clarity, and searching "epic" on this sub gives me a bunch of posts about how epic things are or aren't.

I haven't been on a cruise in 21 years and I know things have changed.

Are there like Fancy dinners still? I'm seeing items for dining looking for reservations now. Are those required or should I Be able to get in as a walk-in?

I got a package that was like 3x $20 a day dining bonuses or something like that.. what am I looking at here? How does that work?
