Issue with bitterness after 3 years

I'm kind of clueless so reaching out to you. My setup:
Profitec Go 100
Eureka Mignon Specialita
Profitec original portafilter
ECM original bottomless portafilter
running this since 3 years and enjoying it, until before few weeks.
Coffee was just bitter. Normally I use only Kimbo Crema Intensa for years because I like the flavor. I tried also other coffee brands which tasted good but decided to stick with Kimbo.
I regularly clean machine and grinder. I tried 4 different beans Kimbo, Lavazza, Borbone etc. and cleaned grinder with each one but it still tastes bitter.
I played with pressure, time, 16-20g and also yield but nothing helped.
Also consulted AI which had some great suggestions bit still nothing
As said, I have this setup for 3 years and always did play with amount of coffee and yield, pressure etc. but never had that much of bitterness.
