My Rosy seems healthy, but she’s not growing?

I got my rosy in mid April, and she has been great so far - she eats well (1 small pinky per week), she’s active, she likes being handled, etc. she has a large enclosure and loves to climb and explore. Her humidity is around 45%, her basking rocks measure 89 degrees with a laser thermometer, and her cold side is at 72-75 during the day, dipping down to 67ish at night. She has hides on both the hot and cold sides of the enclosure, but she really only spends time in the hides on the hot side.
The only thing is, she hasn’t been growing. Since I got her she has never shed, and now she’s 11 months old and only weighs 25 grams. I didn’t weigh her when I got her, but looking at pictures she looks to be roughly the same size. Should I be concerned? Is there anything I should do? The pinky’s I have are 2.5 grams each, so a little on the small side for her weight, but I do have 80 more of them, should I feed her more often, or increase the frequency of feeding?

The only other thing is, when she was in quarantine i would find a little poop on the paper towel every week, but after moving her to reptile soil/sand mix, I have never found a single poop. I’m guessing she’s just hiding them or they’re buried somewhere, but also something I thought was off. She doesn’t look impacted or fat, and doesn’t act lethargic, so probably not related but I figured I’d mention it.

I got a juvenile rosy boa a few weeks ago, and I’m running into some issues with temperatures. She’s in a 40 gallon enclosure, with a 100w DHP on the hot side.
My issue is, if I measure with a laser thermometer, everything seems perfect - the hot side is 91f, and the cold side is 75f. The issue is, if I measure the air temperature with a probe, the cool side is still 75, but the warm side is very cold, only like 81 degrees, unless I put the probe directly under the DHP, then it reads closer to 89. If I turn up the DHP to get the air temperature up, then the hot side gets dangerously hot with the laser thermometer, like 100+ degrees, so I’m not able to raise the air temperature while still keeping a good basking temp on the laser thermometer.
I made the newbie mistake and fed her only a few days after I got her (the breeder said he fed her every week on Sundays, and I didn’t know to skip the first meal when I got her) and she regurgitated the pinky. It’s been 19 days since then so I’m going to feed her next time she comes out of her hide, but I know low temperatures can also lead to regurgitation, and I’m so worried about her regurgitating again. What do you think about my air temps? What would you do?
