Advice on our three week itinerary?

Me and my boyfriend (in our mid 20’s) are traveling to Mexico in nov/dec and would like to get some advice/feedback on how we should plan our trip.
We’re looking for a mix of culture, “must do” activities such as ruins, nature, good food, drinks and beach time.
We don’t want to spend too much time (or money) on traveling between every destination. Neither do we want to stay in Cancun, Tulum or Playa del carmen. Our goal is to experience the best of both worlds while still prioritizing chill time.
We’re flying into Cancun and will stay for one night before traveling to Isla Holbox.
This is our itinerary at the moment:
- Isla Holbox 26 nov-1 dec. Hotel is already booked.
Flight to
- Mexico City 1-3 dec. Mainly because it’s a must-visit when traveling to Mexico.
Flight from Mexico city to
-> Puerto Escondido, La punta (which I’m most excited about). Thinking 3-10 dec but is flexible.
Flight from Puerto escondido to
-> Oaxaca city. Thinking 10-15 dec but is flexible.
Flight from Oaxaca to
-> Cancun, where we’ll wrap up the trip and stay for one night before heading home on the 16th.
Initially, we considered adding Isla mujeres or Bacalar but it didn’t feel right spending that much time on travel days. It would probably make more sense to add another destination closer to one of the places above if we decide to change the itinerary.
Lastly, we’d love some advice on budget. It’s important for us to stay in hotels or airbnb with a higher standard (nothing luxury, but private, clean, and well-rated) and we don’t want to feel restricted by a strict budget. We’d rather be able to spend comfortably without worrying too much. We’re thinking around €2500 / $2500 total per person.
Any other recommendation for our trip is gladly appreciated!
