You would have been 13 today. I’d give up the rest of my birthdays for just one more with you

My brother turned 40 so I baked him a cake-
Marble cake - black cocoa and chocolate chunk and vanilla with white chocolate chunks
Centre was coconut salted caramel mixed with cake crumbs, pralined almonds, oreo cream, sea salt and strawberry preserves
Topped with vanilla cream (chantilly), more coconut salted caramel and strawberry preserves and chocolate ganache

Gluten free. No recipes, just rogue eyeball and texture/taste baking

Choc chunk cookies with sea salt and choc chunk cookies with home made cherry pie filling, crunchy almond butter and sea salt

So I own a studio and every year for their birthday my staff get to pick a treat to celebrate- the rule being must be vegan and gf and I have to either be able to buy it or make it. We’ve had cannoli pyramids, tarts, brownie towers, vintage heart cakes, donuts…this year my staff member send me a pic of a prawn/shrimp cake with the request

Prawny the cake, in vanilla and strawberry/cherry or lemon

So I present Prawnina - vanilla cake with a cherry pie filling and marshmallow ermine frosting. Chocolate button eyes and an edible mouth made by melting down the red part of the reverse Percy lollies and reshaping them

I got to do this American Football tattoo yesterday and I was so excited and outside of my customer and a couple friends no one else I know gets why it made me so happy so I was hoping to share with others that get it.

It was my fairy dog mothers birthday so I asked what treats she missed eating since being vegan and she said a jam and cream filled Lamington from the bakery or black forrest cake- so I baked her lamingtons 4 ways
They are a classic lamington base- vanilla sponge and chocolate ganache coated
Black Forrest- filled with cherry jam, vanilla cream and rolled in roasted flaked almonds and coconut
Bakery classic- filled with raspberry jam and cream and rolled in coconut
Biscoff- filled with biscoff spread and rolled in crushed biscoff pieces
Classic- no filling and rolled in coconut

I also baked her maple chocolate chunk cookies with pralined pecans and sea salt flakes

Made some thank you cookies for a friend. I asked what flavour she’d like and she said raspberry so I made -
Freeze dried raspberries, raspberry jam, toasted coconut, cocoa pralined almonds, white chocolate buttons gf cookies, finished with dark chocolate underside, and a dark chocolate, sea salt, praline and freeze dried almond dust top

No recipe, just going rogue
