Finally found black caps!

Finally found black caps, but not in any quantity to do anything with besides just fresh eating. The thimbleberry harvest continues, however! No trailing blackberries in the area I went to.

Dialed In: Berries

I've dialled in this year where to get thimbleberries and trailing blackberries (Fraser Valley, BC, Canada). I get this much every day, and it will continue for another several days.

Invasive Himalayan blackberries are almost ready, and apples come a little later. Then it will be time to process!

Black cherries for cider this fall!

I used this contraption to pick black cherries from the city's tree around the corner from my house. I spent about half an hour, and got a little over 4 pounds. They're now in my freezer, waiting for crabapples and apples to be ripe to make cider!

Huckleberry Bounty

Last year, I found an awesome spot for blue huckleberries (pictured), which are superior to either blueberries or red huckleberries. Is huckleberry wine any good? What do you do with blue huckleberries?

Berry preservation ideas?

We're looking at a great year for foraged fruit in Cascadia. It's early, but there are already lots of thimbleberries (picture, with a couple early blackberries).

Last year, I picked thimbleberries, trailing blackberries, and black caps, and I made them into make a jam. It was awesome, but between the amount of sugar I added and the high heat for pectin to set, a lot of the delicate, natural flavour was lost. Anyone have any ideas on preserving these fruit in a more natural form?
